This is a rectangular 8 by 10-inch pizza, with a thick crust that is crispy and chewy, and covered in 6 ounces of cheese that goes from side to side of the pan. It is baked in cast iron pans that gives the traditional caramelized cheese crust. It is topped with different toppings, and tomato sauce hence the name “the upside-down pizza”.
