Dave has devoted his career to developing the techniques necessary to provide consistent results having worked in high-volume restaurants throughout the US and Canada. After graduating from the Florida Culinary Institute, Dave joined the Hillstone Restaurant Group kicking off his culinary career with Houston’s Restaurants. He returned to Toronto in 2000, working with Burlington-based, SIRCorp, first as Kitchen Manager and later in the role of Director of Culinary Field Operations for the Jack Astor’s group of restaurants. Then as Executive Chef for e11even, Maple Leaf Sports & Entertainment, Dave created and executed a menu of renewed North American classics with the same unwavering consistency he is known for. Dave went on to be the Executive Chef for FAB Restaurant Concepts, Brickworks Ciderhouse, and the Mill Street Brewpub locations throughout Ontario where he was able to create a wide variety of menus and elevated pub experiences.
